The smell of barbeque on a grill makes our mouth water with pleasure. The sound of meat grilling in direct fire is a pleasure to the ears. The over-all aroma, sound and taste of a hot off the grill barbecue are truly a feast in the senses. This is barbecue and this is how Colorado makes it. They definitely make barbecue best!

Barbecue is the general term for meat cooked under direct heat.

Barbecue has been around our homes, in festivals, fairs and backyards for a very long time now. Barbecue is the best companion while having fun in family gatherings and family vacations. Barbecue is indeed a favorite meal during out of town trips and stay in the beach for it is fun to prepare and delicious to eat.

A barbecue is often cooked in direct heat using charcoals or wood cuts. Any meat can be barbecued; pork, fish, poultry and in some countries barbecued meat innards is a delicacy. A kebab is a barbecue on stick accompanied by tomatoes, onions and other vegetable and spices. Burgers, hotdogs and corns are also great for barbecuing.

Barbecue is first marinated in simple to special sauces to tenderize and flavor the meat. It is usually cooked under low flames to ensure moisture is locked within the meat. Barbecues cooked on high flames in a quick manner tend to come out rare or medium rare. The best thing about cooking barbecue is that there are no fats and grease since it is not a conventional type of cooking with oil. Barbecue is served best with a special dipping sauce.
