When you go on vacation, it is to escape the droll of the daily routine. It is a time to unwind, and perhaps do the things you don't normally get to do. Perhaps take in a live show, see some exotic wildlife or even book a few spa days. When you are make all your plans, don't forget to include an evening of fine dining. It isn't too often that most of us get to put on the fancy clothes and partake in some really, really good cuisine. Believe it or not, the Dominican Republic has some pretty incredible culinary establishments. Here, we will discuss two places in Puerto Plata that Frommer's travel authority has rated as having "the two most elegant and sophisticated restaurants along the north shore of the Dominican Republic". Let's take a look.
In the equally celebrated hotel Casa Colonial, there is the Dominican Republic's most celebrated chef, Rafael Vasquez. His style of cuisine is elegant, yet earthy, and always with an eye for excellence. Vasquez oversees both restaurants, the daytime venue being La Verandah, open for the afternoon only. Lucia is the evening establishment, being available for service until midnight each day.
Both restaurants are designed with cutting edge charm in a boutique style that emits an ambiance of refinery. La Verandah overlooks the beach, and thus is presented with colours of aqua and turquoise, which are only complimented when the afternoon sun streams down and illuminates the space. Lucia on the other hand, is a study in white linen and candlelight, evocative of the colonial era of the Dominican Republic.
Classically trained, Chef Vasquez certainly knows how and when to show his creativity in harmony with his training. Menu's are designed according to his mood, and of course, the season. One evening may see an incredible breast of duck accompanied by foie gras in a brandy reduction. Another evening could present the guest with a simple grilled red snapper in a coconut Creole sauce, yucca fritters and slices of lobster tail on the side. Then, get ready for Vasquez's infamous Volcano. A sculpted pyramid of chocolate and ice cream is deep fried and presented as a work of art, and guests always report it tastes a thousand times better than it looks!
Throw the diet regime out the window when on vacation. Leave the calorie counter at home, and certainly don't spend your precious time off balancing carbohydrates and proteins. After all, vacation is for enjoyment! Get your exercise, drink plenty of water, and delight in a fine dining experience. The diet can wait at home for you.
